Red currants are brought to boil and simmered gently. The juice and fruit are then transferred to the fruit press, where it is squeezed slowly to extract the maximum amount of juice from the fruit. This distinctive jelly is perfect to accompany roast lamb and is a delicious addition to all gravies.
